Ingredients
- - White cabbage, sliced — 300g (3 cups)
- - Carrots, sliced — 200g (1 1/3 cups)
- - Cauliflower florets — 200g (2 cups)
- - Red bell pepper, sliced — 150g (1 medium)
- - White vinegar — 500ml (2 cups)
- - Water — 500ml (2 cups)
- - Salt — 30g (2 tbsp)
- - Bay leaves — 2 (2)
- - Black peppercorns — 5g (1 tsp)
Method
- Pack the cabbage, carrot, cauliflower and pepper tightly into a large sterilised jar.
- Bring vinegar, water, salt, bay leaves and peppercorns to a boil in a saucepan.
- Pour the hot brine over the vegetables, ensuring they are fully submerged.
- Seal the jar and let cool to room temperature.
- Refrigerate and allow to pickle for at least 5-7 days before eating, for the best flavour.
