  • - 500g Potatoes, peeled and grated
  • - 100g Hard cheese, cubed small
  • - whole Egg, large
  • - 3 tbsp Plain flour
  • - 0.5 tsp Salt
  • - 250ml Vegetable oil, for frying

Method

  1. Grate the potatoes and squeeze them well in a muslin cloth to remove excess liquid.
  2. Mix the drained potato with the egg, flour and salt to form a firm mixture.
  3. Take a small handful of mixture, flatten it in your palm, place a cube of cheese in the centre, and fold the potato around it to enclose fully.
  4. Roll gently into a ball, repeating with the remaining mixture.
  5. Heat the oil in a deep pan to 170C (340F).
  6. Fry the balls in batches for 4-5 minutes, turning occasionally, until golden and crisp all over.
  7. Drain on kitchen paper and serve warm while the cheese centre is still soft.
