Ingredients

  • Plain flour — 190 g (6.5 oz)
  • Baking powder — 1 tsp
  • Eggs, separated — 5
  • Sugar, divided — 200 g (7 oz)
  • Milk — 80 ml (3 fl oz)
  • Can evaporated milk — 350 g (12.3 oz)
  • Can sweetened condensed milk — 395 g (14 oz)
  • Cream — 120 ml (4 fl oz)
  • Whipped cream, for topping — 360 ml (12 fl oz)

Method

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. Whisk the egg yolks with half the sugar until pale and thick.
  3. In a separate bowl, whisk the egg whites to soft peaks, then gradually add the remaining sugar, whisking to stiff, glossy peaks.
  4. Fold the flour and baking powder into the yolk mixture, alternating with the milk.
  5. Gently fold in the whisked egg whites in batches, keeping as much air in the batter as possible.
  6. Pour into the prepared dish and bake for 30–35 minutes until a skewer comes out clean.
  7. Let the cake cool completely, then poke holes all over the surface with a fork.
  8. Combine the evaporated milk, condensed milk and cream, then pour evenly over the cooled cake, allowing it to soak in fully.
  9. Chill for at least 2 hours, then top generously with whipped cream before serving.
