Ingredients
- 150g cooked peeled Atlantic prawns
- 100g white crab meat (or flaked white fish flakes)
- 3 tbsp mayonnaise
- 1 tsp fresh dill, finely chopped
- Squeeze of fresh lemon juice
- 2 thick slices of traditional brown soda bread
- Salted butter and thin slices of cucumber for the base
Method
- In a medium bowl, combine the mayonnaise, chopped fresh dill, and lemon juice. Season lightly with black pepper.
- Gently fold the cooked prawns and white crab meat into the seasoned mayonnaise until thoroughly coated.
- Take your slices of fresh brown soda bread and butter them generously.
- Lay a few thin slices of cucumber across the buttered bread—this acts as a fresh barrier and adds a lovely crunch.
- Spoon a mountain of the creamy seafood mixture high over the cucumber layer. Garnish with an extra dusting of black pepper or a sprig of dill, and serve open-faced with a knife and fork.
