Traditional Oatmeal Stewed Peas

Ingredients

  • 350g frozen or fresh garden peas
  • 150ml whole milk
  • 2 tbsp fine oatmeal or ground pinhead oats
  • 40g salted Irish butter
  • Salt and lots of freshly cracked black pepper

Method

  1. In a medium saucepan, combine the peas, whole milk, and the fine oatmeal.
  2. Place over medium heat and bring to a gentle simmer, stirring continuously so the oatmeal doesn't clump at the bottom.
  3. Simmer softly for 6-8 minutes. As the oats cook, they will naturally thicken the milk into a rich, velvety savory porridge binding the peas together.
  4. Stir in the salted butter until completely melted and emulsified into the sauce.
  5. Season heavily with black pepper and a pinch of salt before serving alongside bacon or pork chops.
