Ingredients
- 350g frozen or fresh garden peas
- 150ml whole milk
- 2 tbsp fine oatmeal or ground pinhead oats
- 40g salted Irish butter
- Salt and lots of freshly cracked black pepper
Method
- In a medium saucepan, combine the peas, whole milk, and the fine oatmeal.
- Place over medium heat and bring to a gentle simmer, stirring continuously so the oatmeal doesn't clump at the bottom.
- Simmer softly for 6-8 minutes. As the oats cook, they will naturally thicken the milk into a rich, velvety savory porridge binding the peas together.
- Stir in the salted butter until completely melted and emulsified into the sauce.
- Season heavily with black pepper and a pinch of salt before serving alongside bacon or pork chops.
