Description: A cleaner, orange-liqueur-free Margarita variant that lets 100% agave tequila's flavor lead, sweetened with agave nectar instead.

Cultural Background: Created at Tommy's Mexican Restaurant in San Francisco in the late 1980s or 90s by owner Julio Bermejo, now considered a modern classic in its own right.

Tips: Use a genuinely good 100% agave tequila — without the orange liqueur, there's nowhere for a poor spirit to hide.

Variations: A pinch of salt in the shaker (rather than a rim) is a common Tommy's-style trick to round out the flavor.

Serving Suggestion: Serve over ice as a cleaner, less sweet alternative to the classic Margarita.

Nutrition: Approx. 160 kcal per serving

FAQs:

Q: Why remove the triple sec?
A: Julio Bermejo felt it masked good tequila's flavor, so he replaced it with agave nectar to let the spirit shine.
