Toasted Whole-Spice Curry Base
The Quirky Foodster Team

Ingredients
- Whole cumin seed — 1 tbsp
- Whole coriander seed — 1 tbsp
- Whole mustard seed — 1 tsp
- Whole fenugreek seed — 1 tsp
- Dried whole red chiles — 2
- Curry leaves if available — a few
Method
- Combine the whole spices in a small dish, ready to temper fresh at the start of cooking.
- The tempering step (blooming the whole spices in hot oil at the start of cooking) itself functions as the toasting step — no separate pre-toast-and-grind stage.
Origin: A Quirky Foodster original — a whole-spice (untoasted for storage, tempered fresh) alternative to a ground curry powder, for cooks who prefer building flavour through fresh tempering rather than a pre-ground jar.
Use: Add the whole mix directly to hot oil or ghee at the very start of cooking, before other aromatics, and let the seeds pop and become fragrant before proceeding.
Classic Dishes: A flexible base technique applicable to dals, vegetable dishes, and simple curries.
Storage: The dry whole-spice components (stored separately or pre-combined) keep well over a year sealed and dark, since nothing is ground.
Variations: This whole-spice, fresh-tempering approach versus a pre-ground curry powder represents two fundamentally different but equally valid philosophies of curry spicing found throughout South Asian cooking.
Substitutions: Panch phoron as a related, more specifically Bengali whole-spice tempering tradition.
