Ingredients
- 4 chicken fillets (or skinless chicken thighs), pounded flat
- 100g panko breadcrumbs
- 2 eggs, beaten
- 50g flour
- 2 tbsp Spice Bag Seasoning (chili flakes, Chinese five-spice, salt, garlic powder, sugar)
- 1 red pepper, thinly sliced
- 1 green pepper, thinly sliced
- 1 medium onion, thinly sliced
- 1 red chili, finely sliced (optional)
- 4 brioche burger buns
- For the Curry Mayo: 4 tbsp mayonnaise, 1 tsp mild curry powder, 1 tsp honey
Method
- Mix the flour with 1 tablespoon of the spice bag seasoning in one bowl. Put the beaten eggs in a second bowl, and the panko breadcrumbs in a third.
- Dredge each chicken fillet in the seasoned flour, dip into the egg, and then coat thoroughly in the panko breadcrumbs.
- Air-fry at 200°C for 15-18 minutes or shallow fry in vegetable oil until golden and cooked through (internal temp 75°C). Toss the remaining spice bag seasoning over the hot crispy chicken immediately after cooking.
- While the chicken cooks, heat a splash of oil in a pan over high heat. Stir-fry the sliced peppers, onions, and fresh chili for 4-5 minutes until slightly softened but still vibrant and retaining a bit of crunch.
- Mix the mayonnaise, curry powder, and honey in a small bowl until smooth.
- Toast the brioche buns. Spread curry mayo on the base, add the crispy spice chicken, heap the stir-fried peppers and onions on top, and close the burger. Serve hot.
