Ingredients

  • Lamb shoulder or beef, cut into 3 cm (1¼ in) cubes — 1 kg (2.2 lb)
  • Large Onion, grated or finely blended — 2
  • Vegetable oil — 45 ml (3 tbsp)
  • Ground cumin — 5 g (1 tsp)

  • Salt, — to taste
  • Onion, sliced into rings, for serving — 1

Method

  1. In a large bowl, combine the meat cubes with grated onion, oil, cumin, black pepper, and salt, mixing thoroughly to coat evenly.
  2. Cover and marinate in the refrigerator for at least 4 hours, or overnight for the best flavour and tenderness.
  3. Thread the marinated meat onto skewers, leaving a little space between each piece for even cooking.
  4. Preheat a grill or grill pan to medium-high heat.
  5. Grill the skewers, turning occasionally, for 10–14 minutes total until well charred on the outside and cooked to the desired doneness inside (internal temperature at least 63°C/145°F for medium, or 71°C/160°F for well-done).
  6. Let the skewers rest for a few minutes off the heat before serving.
  7. Serve hot with raw onion rings splashed with a little lemon juice or vinegar, and fresh non bread.

Introduction: Shashlik, marinated and grilled meat skewers cooked over charcoal, is one of the most popular street and roadside foods across Tajikistan, sold from smoky grill stands especially in the evenings.

Cultural Background: Shashlik, marinated and grilled meat skewers cooked over charcoal, is one of the most popular street and roadside foods across Tajikistan, sold from smoky grill stands especially in the evenings. Its simple marinade of onion and spices allows the flavour of well-charred, smoky meat to shine.

Tips: Marinating with grated onion (rather than just sliced) helps tenderize the meat more effectively, as the onion’s natural enzymes and moisture penetrate deeper into the flesh.

Variations: A pinch of ground coriander or a splash of pomegranate juice in the marinade adds extra depth, variations found in different regional and family traditions.

Storage: Refrigerate cooked shashlik in an airtight container for up to 3 days.

Reheating: Reheat in a 180°C (350°F) oven for 10 minutes, or briefly on a hot grill or pan to restore some char.
