Introduction: Soft, golden farmer's cheese pancakes, a beloved and comforting Russian breakfast served with sour cream or jam.
Cultural Background: Syrniki are a cherished staple of Russian breakfast tables, made from tvorog (farmer's cheese), their tender interior and lightly crisp exterior making them a favourite for both weekday mornings and leisurely weekend brunches.
Tips: Drain the cheese well beforehand, as excess moisture makes the dough too wet to shape properly. Cook over moderate heat so the syrniki cook through without burning on the outside.
Variations: Add a handful of raisins to the dough for extra sweetness. Serve with fresh berries alongside the sour cream.
Storage: Refrigerate leftovers in an airtight container for up to 2 days.
Reheating: Reheat in a dry pan over low heat for a few minutes per side, or in a microwave briefly.
