Sweet Whiskey & Honey French Toast

An indulgent, sweet breakfast dish turning stale brioche or traditional white pan bread into a rich treat. The egg custard soaking liquid is heavily scented with sweet vanilla and smooth Irish whiskey.

Ingredients

  • 4 thick slices of brioche or white farmhouse bread
  • 2 large eggs
  • 50ml single cream or whole milk
  • 1.5 tbsp smooth Irish whiskey
  • 1 tsp vanilla extract; 1/2 tsp ground cinnamon
  • 20g butter (for frying)
  • Irish honey or maple syrup to serve

Method

  1. In a wide, shallow bowl or dish, whisk together the eggs, cream, Irish whiskey, vanilla extract, and ground cinnamon until completely combined.
  2. Place a slice of bread into the egg custard mixture, letting it soak for 30-45 seconds, then flip to soak the other side thoroughly.
  3. Melt the butter in a large non-stick frying pan over medium heat until foaming.
  4. Transfer the soaked bread carefully to the hot pan. Fry for 3-4 minutes on each side until puffing up, golden-brown, and caramelized on the surface.
  5. Serve hot stacked on plates, heavily drizzled with warm honey or syrup, and dusted with a touch of extra cinnamon.
