Ingredients

  • - 150 g (5 oz) baobab fruit pulp (múcua), or 100 g baobab powder
  • - 1 litre (4 cups) water
  • - 80-100 g (1/3-1/2 cup) sugar, or to taste
  • - Ice, to serve

Method

  1. Break the baobab pulp into a large bowl and cover with the water.
  2. Let it soak for 20-30 minutes, mashing occasionally with a whisk or spoon to help it dissolve.
  3. Strain the mixture through a fine sieve or muslin cloth into a jug, pressing to extract as much liquid as possible, and discard the solids.
  4. Stir in the sugar until fully dissolved, tasting and adjusting sweetness as needed.
  5. Chill in the refrigerator for at least 1 hour.
  6. Serve over ice in glasses.
