Sour Pomegranate Soup

Ingredients
- - 150 g (5 oz) minced lamb or beef, formed into small meatballs
- - 1.2 litres (5 cups) water or broth
- - 500 ml (2 cups) pomegranate juice
- - 2 tbsp pomegranate molasses
- - 1 onion, finely chopped
- - 60 g (1/3 cup) rice, rinsed
- - 2 tbsp chopped fresh mint
- - 2 tbsp chopped fresh parsley
- - 1 tbsp olive oil
- - 1 tsp salt
- - 1/2 tsp black pepper
Method
- Season the minced meat lightly with salt and pepper and shape into small meatballs, about the size of a walnut.
- Heat the oil in a saucepan and cook the onion over medium heat for 5 minutes until softened.
- Add the water or broth, pomegranate juice, pomegranate molasses and rice, and bring to a boil.
- Carefully drop in the meatballs, reduce heat, and simmer for 25-30 minutes until the rice and meatballs are fully cooked.
- Stir in the mint and parsley, season with salt and pepper to taste, and simmer 5 minutes more before serving hot.
