  • Water or fish stock — 1 L (4 cups)
  • Tomatoes, chopped — 2
  • Onion, chopped — 1
  • Garlic, minced — 2 cloves
  • Thumb-sized piece ginger, grated — 1
  • Scotch bonnet chilli, whole — 1
  • Tomato paste — 1 tbsp
  • Vegetable oil — 2 tbsp
  • Salt, or to taste — 1 tsp
  • Bay leaf — 1

Method

  1. Heat oil in a pot and sauté the onion, garlic and ginger until fragrant, about 3 minutes.
  2. Stir in the tomato paste and cook for 2 minutes.
  3. Add the chopped tomatoes and cook until they break down, about 8 minutes.
  4. Pour in the water or fish stock, add the bay leaf and whole chilli, and bring to a gentle boil.
  5. Season with salt, then carefully lower in the fish steaks.
  6. Simmer gently for 12-15 minutes until the fish is just cooked through and flakes easily; avoid vigorous boiling, which breaks the fish apart.
  7. Remove the whole chilli and bay leaf before serving hot.
