Ingredients

  • - 500 ml (2 cups) water or stock, as needed
  • - 1 onion, chopped
  • - 1 red bell pepper, chopped
  • - 2 cloves garlic, minced
  • - 1 tsp ground cumin
  • - 2 tbsp vegetable oil
  • - 4 eggs (for poaching, one per serving)
  • - 2 tbsp fresh cilantro, chopped
  • - Salt, to taste

Method

  1. Heat the oil in a saucepan and sauté the onion, bell pepper and garlic until softened, about 5 minutes.
  2. Add the black beans with their cooking liquid and the cumin, and simmer for 10 minutes to let the flavours meld.
  3. Blend the soup until smooth (in batches if using a standard blender), adding extra water or stock to reach a good soup consistency.
  4. Return the soup to the pot and bring to a gentle simmer.
