Ingredients

  • - 1 kg (2.2 lb) zapallo (butternut or calabaza squash), peeled and cubed

  • - 1 litre (4 cups) vegetable or chicken stock
  • - 100 ml (1/3 cup + 1 tbsp) cream
  • - 2 tbsp butter

Method

  1. Melt the butter in a pot and cook the onion, garlic and carrot until softened, about 6 minutes.
  2. Add the squash and stock, bring to a boil, then simmer 20-25 minutes until the squash is very tender.
  3. Blend until completely smooth using an immersion blender or standing blender.
  4. Stir in the cream and nutmeg, season with salt and pepper, and warm through gently without boiling.
  5. Serve hot, garnished with toasted pumpkin seeds.
