  • 60 ml (1/4 cup) Sofrito
  • 150 g (5 oz) Smoked ham hock or bacon (optional)
  • 150 g (5 oz) Auyama (calabaza squash), chunked
  • 1 Bay leaf
  • to taste Salt
  • 1.5 l (6 cups) Vegetable stock or water

Method

  1. Drain soaked beans and add to a pot with stock, bay leaf and ham hock if using.
  2. Simmer 1 hour until beans are tender.
  3. Add sofrito and squash, simmering 15 more minutes until the squash softens and slightly thickens the broth.
  4. Remove ham hock, shred any meat and return to the pot; discard bone.
  5. Season with salt and serve hot, optionally blending a portion for a creamier texture.
