Ingredients
- Smooth peanut butter — 1 cup (260 g / 9 oz)
- Onion, chopped — 1
- Tomatoes, chopped — 2
- Garlic, minced — 2 cloves
- Carrot, diced — 1
- Oil — 2 tbsp
- Water or vegetable stock — 5 cups (1.2 litres / 40 fl oz)
- Chilli, chopped — 1 (optional)
- Salt and pepper — to taste
- Chopped coriander, to garnish
Method
- Heat the oil in a pot and sauté the onion and garlic until softened.
- Add the chopped tomatoes and carrot, and cook for 8 minutes until the tomatoes break down.
- Add the water or stock and bring to a boil.
- Ladle a little of the hot broth into the peanut butter in a separate bowl, whisking to loosen it, then stir this mixture back into the pot.
- Add the chilli if using, and simmer for 15–20 minutes, stirring occasionally, until the soup thickens slightly.
- Season with salt and pepper, and garnish with chopped coriander before serving.
