Ingredients

  • Gin — 60 ml (2 oz)
  • Fresh lemon juice — 22.5 ml (3/4 oz)
  • Simple syrup — 15 ml (1/2 oz)
  • Egg white — 1
  • Soda water, to top — 60 ml (2 oz)

Method

  1. Dry-shake all ingredients except soda water without ice.
  2. Add ice and shake hard again.
  3. Strain into a highball glass without ice.
  4. Top with soda water and serve immediately.
