Ingredients

  • - 12 sheets thin yufka or spring roll pastry

Method

  1. Mix the crumbled cheese with dill and parsley in a bowl.
  2. Lay a pastry sheet flat, place a small line of filling near one edge, and roll tightly into a thin cigarette shape, sealing the final edge with a little beaten egg.
  3. Repeat with the remaining pastry and filling.
  4. Heat the oil in a deep pan to 175C (350F).
  5. Fry the rolls in batches for 2-3 minutes, turning occasionally, until golden and crisp on all sides.
  6. Drain on kitchen paper and serve immediately while hot.
