Cultural Background: Okra soup is a staple in Sierra Leonean homes, prized for its silky, slightly mucilaginous texture that makes it perfect for scooping up with fufu or rice. Cooked with fresh or smoked fish, meat and leafy greens, it is a nourishing, everyday dish that showcases the country's love of hearty, well-spiced one-pot meals eaten communally.
Tips: Grating or finely chopping the okra (rather than slicing into rounds) gives the classic smooth, slightly stretchy texture. Stir gently but frequently once the okra is added to prevent sticking.
Variations: Add chopped spinach or potato leaves for extra greens. Use only smoked fish for a lighter, pescatarian version. Omit the meat and fish, use vegetable stock, and add mushrooms for umami depth.
Storage: Refrigerate in an airtight container for up to 3 days.
Reheating: Reheat gently on the stovetop over low heat, stirring occasionally, until hot throughout.

FAQs:
Q: Why is my okra soup slimy in a bad way?
A: A little natural stretchiness is normal and desired; excess sliminess usually means the okra wasn't cooked long enough with the acidic tomato to balance it.
Q: Can I use frozen okra?
A: Yes — thaw and drain well before grating or chopping.
