Method

  1. Grate or blend the ginger with a splash of the water until finely pulped.
  2. Bring the remaining water to a boil, add the ginger pulp, then remove from heat and let steep, covered, for at least 4 hours or overnight.
  3. Strain the mixture through a fine sieve or muslin cloth, pressing to extract as much liquid as possible. Discard the solids.
  4. Stir in the sugar until fully dissolved, then add the lime juice.
  5. Taste and dilute with extra cold water to reach your preferred strength and sweetness.
  6. Chill thoroughly and serve over ice.
