Ingredients
- 1 1/2 cups (300 g) red lentils, rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 2 tbsp vegetable oil
- 6 cups (1.5 l) vegetable or chicken stock
- Juice of 1 lemon
- Salt and pepper to taste
- Fried bread cubes (croutons), for serving
Method
- Heat the oil in a pot and sauté the onion and garlic until soft.
- Add the carrot, cumin and turmeric and cook for 2 minutes until fragrant.
- Stir in the lentils and stock, bring to a boil, then reduce heat and simmer for 25-30 minutes until the lentils are fully soft.
- Blend the soup until smooth using an immersion blender, or in batches in a countertop blender.
- Season with salt, pepper and lemon juice, adjusting consistency with extra stock if needed.
- Serve hot topped with crisp fried bread cubes.
