Ingredients

  • - 200 g (1 cup) red lentils, rinsed
  • - 2 tbsp vegetable oil
  • - 1 onion, chopped
  • - 2 garlic cloves, minced
  • - 1 carrot, chopped
  • - 1 tsp ground cumin
  • - 1/2 tsp ground turmeric
  • - 1 litre (4 cups) vegetable or chicken stock
  • - 1 tsp salt, or to taste
  • - 1/4 tsp black pepper
  • - 2 tbsp fresh lemon juice
  • - 2 tbsp fresh coriander, chopped, for garnish
  • - Fried bread cubes or crispy onions, for garnish (optional)

Method

  1. Heat the oil in a large pot and cook the onion until soft and translucent.
  2. Add the garlic and carrot, cooking for 2-3 minutes, then stir in the cumin and turmeric for 1 minute.
  3. Add the rinsed lentils and stock, bring to a boil, then reduce heat and simmer for 25-30 minutes until the lentils and carrot are very soft.
  4. Blend the soup with an immersion blender until smooth, or carefully transfer to a countertop blender in batches.
  5. Season with salt and pepper, stir in the lemon juice, and adjust the consistency with a little extra stock or water if needed.
  6. Ladle into bowls and garnish with fresh coriander and, if using, fried bread cubes or crispy onions.
