Method

  1. Dissolve the yeast in the warm milk and rest 10 minutes until foamy.
  2. Rub the butter into the flour and salt, then mix in the yeast mixture and egg yolks to form a smooth dough. Rest, covered, for 1 hour.
  3. Combine the ground nuts, sugar and cardamom for the filling.
  4. Roll the dough thin and cut into rounds. Place a spoonful of filling on one half of each round, fold over, and press the edges to seal into a crescent.
  5. Pinch a decorative pattern along the sealed edge using tweezers or the tines of a fork.
  6. Brush with egg wash and bake at 180C (350F) for 20-25 minutes until pale golden (traditionally shekerbura stays light in colour).
  7. Cool completely and dust with icing sugar before serving.
