Method
- Dissolve the yeast and sugar in the warm water and let sit for 10 minutes until foamy.
- Combine the flour and salt in a bowl, then add the yeast mixture, mixing to form a soft, sticky dough.
- Cover and let rise in a warm place for 1–1.5 hours, or until doubled.
- Heat oil to 175°C (350°F) in a deep pan.
- With wet hands, take a portion of dough, poke a hole through the centre to form a ring, and gently stretch before sliding into the hot oil.
- Fry for 2–3 minutes per side until golden and puffed.
- Drain on paper towels and dust generously with sugar while still warm.
