Ingredients
- 600 g (1.3 lb) Firm white fish fillets (such as grouper or sea bass)
- 4 large Onions, thinly sliced
- 300 g (1.5 cups) White rice
- 3 cloves Garlic cloves, minced
- 1 tsp Ground cumin
- 1 tbsp Tomato paste
- 80 ml (1/3 cup) Vegetable oil
- 600 ml (2.5 cups) Fish stock or water
- to taste Salt and pepper
Method
- Season the fish fillets with salt and pepper and set aside.
- Heat the oil in a pot and fry the sliced onions slowly over low heat for 25–30 minutes until deeply caramelized
- and dark brown.
- Remove half the caramelized onions and set aside; blend or mash the remainder with the garlic, cumin and
- tomato paste to form a base.
- Add the fish stock to the onion base, bring to a simmer, and gently poach the fish fillets for 10 minutes until
- just cooked; remove and keep warm.
- Add the rice to the same pot and cook in the fish-and-onion stock for about 18–20 minutes until tender and
- deeply flavoured.
- Serve the rice topped with the poached fish and the reserved crispy caramelized onions.
