Method

  1. Prepare a simple syrup by combining sugar, water and lemon juice in a saucepan; simmer 5-7 minutes, then stir in rosewater and cool.
  2. Preheat the oven to 180°C (350°F).
  3. Pull apart the kunafa pastry strands and toss thoroughly with the melted butter.
  4. Press half the buttered pastry into a greased round baking pan.
  5. Spread the shredded cheese evenly over the pastry layer.
  6. Top with the remaining pastry, pressing down gently.
  7. Bake for 35-40 minutes until deeply golden.
  8. While still hot, pour the cooled syrup evenly over the kunafa.
  9. Garnish with crushed pistachios and let sit a few minutes before slicing and serving warm.
