Cultural Background: Meaning 'hunter's sauce', chasseur is a rustic derivative of espagnole built with mushrooms, shallots, white wine and tomato, traditionally served with game, chicken or sautéed rabbit — dishes a hunter might bring home.
Tips: • Browning the mushrooms well before adding liquid builds essential depth of flavour. • Add the fresh herbs at the very end to preserve their aroma.
Variations: • Use wild mushrooms like chanterelles for a more rustic, autumnal version. • Add a splash of brandy with the wine for extra depth.
Storage: Refrigerate up to 3 days in an airtight container.
Reheating: Reheat gently over low heat, stirring occasionally. Nutrition (per serving) Approx. 55 kcal, 1.5 g protein, 3 g fat, 4 g carbohydrate per 30 ml serving.
