Ingredients

  • Vegetable or potato samosas, halved or quartered — 6

Method

  1. Whisk the chickpea flour with the stock in a small saucepan and simmer for 4–5 minutes, stirring, until slightly thickened into a light sauce; season with fish sauce or soy sauce.
  2. In a large bowl, combine the halved samosas, shredded cabbage and sliced onion.
  3. Pour the warm sauce over the mixture.
  4. Add the lime juice, sliced chilli, chopped herbs and oil.
  5. Toss gently to combine, being careful not to break the samosas apart too much.
  6. Serve immediately while the samosas are still slightly warm and crisp.
