Ingredients

  • 20 sheets Spring roll or samosa pastry sheets
  • 300 g Ground beef or lamb
  • 1 medium Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 Green chilli, finely chopped
  • 3g Ground cumin
  • 2g Ground coriander
  • 500 ml Vegetable oil (for filling and frying)
  • to taste Salt and black pepper
  • 30 g Flour paste (flour + water), for sealing

Method

  1. Heat 1 tbsp oil in a frying pan and sauté the onion until soft.
  2. Add the garlic, chilli, cumin and coriander, cooking for 1 minute until fragrant.
  3. Add the ground meat, breaking it up well, and cook through until browned. Season with salt and pepper. Set aside to cool completely.
  4. Lay out a pastry strip and place a spoonful of filling near one end. Fold into a triangle shape, tucking as you go, sealing the final edge with flour paste.
  5. Repeat with remaining pastry and filling.
  6. Heat oil in a deep pot to 180°C (350°F) and fry the sambuussa in batches for 2-3 minutes until golden and crisp.
  7. Drain on paper towels and serve hot with a spicy pepper sauce.
