Ingredients

  • - Leeks, white and light green parts, sliced — 400g (3 medium)
  • - Black olives — 60g (1/2 cup)
  • - Olive oil — 40ml (3 tbsp)
  • - Lemon juice — 20ml (4 tsp)
  • - Garlic, minced — 3g (1/2 clove)
  • - Salt — 3g (1/2 tsp)

Method

  1. Blanch the sliced leeks in boiling water for 3-4 minutes until just tender; drain and let cool.
  2. Combine olive oil, lemon juice, garlic and salt in a bowl to make the dressing.
  3. Toss the blanched leeks with the dressing.
  4. Add the olives and toss again gently.
  5. Let sit for 10 minutes before serving to allow flavours to meld.
