  • Medium Potatoes, boiled and diced — 4
  • Medium Carrots, boiled and diced — 2
  • Cooked ham or bologna-style sausage, diced — 300 g (10 oz)
  • Eggs, hard-boiled and diced — 4
  • Dill pickles, diced — 3
  • Frozen peas, cooked — 150 g (1 cup)
  • Mayonnaise — 200 g (3/4 cup + 2 tbsp)
  • Fine salt and black pepper — to taste
  • Fresh dill, to garnish

Method

  1. Boil the potatoes and carrots separately until tender, then cool and dice into small even cubes.
  2. Dice the ham, hard-boiled eggs and dill pickles to a similar small size.
  3. Combine the potatoes, carrots, ham, eggs, pickles and peas in a large bowl.
  4. Fold in the mayonnaise gently until evenly coated.
