Ingredients

  • Red bell peppers — 4
  • Tomatoes — 4
  • Garlic, minced — 2 cloves
  • Olive oil — 3 tbsp
  • Lemon juice — 1 tbsp
  • Ground cumin — 1/2 tsp
  • Salt — to taste

Method

  1. Char the peppers and tomatoes over an open flame or under a hot grill until the skins blacken and blister, turning occasionally.
  2. Place the charred vegetables in a covered bowl for 10 minutes to steam, then peel off the skins and remove the pepper seeds.
  3. Roughly mash the peeled peppers and tomatoes together with a fork.
  4. Stir in the garlic, olive oil, lemon juice, cumin and salt.
  5. Serve at room temperature with bread.
