Introduction: A crisp vegetable salad of tomato, onion and cucumber, dressed with a light peanut vinaigrette that echoes Mali’s love of groundnuts.
Cultural Background: Peanuts, grown widely across Mali, find their way into savoury dishes far beyond stews, including this everyday salad, where a small amount of peanut adds richness to fresh garden vegetables.
Tips: Thin the peanut dressing gradually with water until it reaches a pourable, not too thick, consistency. Salt the vegetables lightly beforehand if they need a touch more seasoning.
Variations: Add a chopped chilli to the dressing for extra heat. Include shredded cabbage for extra crunch.
Storage: Best eaten fresh; the dressed salad can be refrigerated for a few hours but is best consumed the same day.
Reheating: This is a cold salad and is not reheated.
