Ingredients

  • - 2 ripe avocados, diced
  • - 100 g (1 cup) gari (dried granulated cassava), lightly toasted
  • - 1 tomato, diced
  • - 1/2 red onion, thinly sliced
  • - 1 tbsp lime juice
  • - 2 tbsp vegetable oil
  • - 1/2 tsp salt, or to taste
  • - 1 small chilli, finely chopped (optional)

Method

  1. Toast the gari lightly in a dry pan over low heat for 2-3 minutes to freshen its texture, then set aside to cool.
  2. In a mixing bowl, combine the diced avocado, tomato and sliced onion.
  3. Whisk together the lime juice, oil, salt and chilli if using.
  4. Pour the dressing over the avocado mixture and toss gently to combine without mashing the avocado.
  5. Sprinkle the toasted gari over the top just before serving to keep it crisp.
