Ingredients

- 40 g (1/3 cup) all-purpose flour
- 30 ml (2 tbsp) olive oil
- 1 (1) lemon, cut into wedges
Method
- Pat cheese slices dry with kitchen paper.
- Dredge each slice lightly in flour, shaking off excess.
- Heat olive oil in a frying pan over medium-high heat.
- Fry cheese for 1–2 minutes per side until golden and just beginning to soften, but not melting through.
- Remove immediately and place on a serving plate.
- Squeeze fresh lemon juice over the top just before serving.
