Ingredients

  • Water — 480 ml (16 fl oz)
  • Milk — 480 ml (16 fl oz)
  • Loose black tea leaves — 2 tbsp
  • Grated fresh ginger — 1 tbsp
  • Cloves — 3
  • Sugar, or to taste — 2 tbsp

Method

  1. Bring the water to a boil in a saucepan and add the ginger and cloves, simmering for 3–4 minutes.
  2. Add the tea leaves and simmer for a further 2 minutes.
  3. Add the milk and sugar, and bring back to a gentle simmer.
  4. Simmer for 5 minutes, allowing the tea to develop a rich colour and flavour.
  5. Strain into cups and serve hot.
