  • 150 g (5 oz) Cooked carrots, diced
  • 1 medium Apple, diced
  • 1 large Pickled gherkin, diced
  • 1/2 small Red onion, finely diced
  • 2 tbsp Apple cider vinegar
  • 1 tsp Sugar
  • 1/2 tsp Salt

Method

  1. Combine the diced beetroot, potato, carrot, apple, gherkin and red onion in a large bowl.
  2. Whisk together the vinegar, sugar and salt until dissolved.
  3. Pour the dressing over the vegetables and toss gently to coat, taking care not to crush the ingredients.
  4. Cover and refrigerate for at least 1 hour before serving to let the flavours meld and the beetroot colour the mixture.
