Ingredients

  • - 2 oz gin
  • - 1/2 oz fresh lemon juice
  • - 1/2 oz fresh lime juice
  • - 3/4 oz simple syrup
  • - 1 oz cream
  • - 1 egg white
  • - 3 drops orange flower water
  • - Soda water, to top

Method

  1. Dry-shake all ingredients except soda (no ice) for a full minute — this drink needs an unusually long shake.
  2. Add ice and shake hard for another minute.
  3. Strain into a chilled glass and top gently with soda water.

Description: A luxuriously rich, long-shaken gin fizz with cream, egg white, and orange flower water.

Garnish: None traditionally required

Note: Invented in 1888 New Orleans; the notoriously long shake time was once handled by relay teams of 'shaker boys' at Ramos's original bar.
