Introduction: A comforting, light chicken and rice soup, a beloved Portuguese home remedy and everyday comfort food.
Cultural Background: Canja de galinha is treasured across Portugal as a gentle, restorative soup, often made when someone is feeling unwell, its simple, nourishing combination of chicken, rice and a touch of mint reflecting generations of home cooking wisdom.
Tips: Skim the broth periodically during cooking for the cleanest, clearest flavour. Add the mint at the very end, as its flavour is best fresh and can fade if cooked too long.
Variations: Add a squeeze of lemon for extra brightness. Include diced potato for a heartier version.
Storage: Refrigerate in an airtight container for up to 3 days.
Reheating: Reheat gently on the stovetop over medium heat until warmed through.
