  • Oil, plus extra for brushing and frying — 1 tbsp

  • Potatoes, boiled and mashed — 3
  • Small onion, finely chopped and sautéed — 1
  • Chopped dill — 2 tbsp
  • Salt and pepper — to taste

Method

  1. Combine the flour, 1 tbsp oil, salt and warm water into a smooth, soft dough; rest for 20 minutes.
  2. Mix the mashed potato with the sautéed onion, dill, salt and pepper for the filling.
  3. Divide the dough into portions and roll each out thinly.
  4. Spread a portion of filling over each rolled sheet, leaving a border, then fold into a flat parcel, sealing the edges.
  5. Either pan-fry in a little oil for 2–3 minutes per side until golden, or brush with oil and bake at 190°C (375°F) for 20 minutes.
