  • Carrot, sliced — 1
  • Water — 1.9 L (64 fl oz)
  • Rice — 90 g (3 oz)
  • Eggs — 2
  • Lemon juice — 2 tbsp
  • Salt and pepper — to taste

Method

  1. Simmer the chicken with the onion, carrot and water for 45–50 minutes until the chicken is tender.
  2. Remove the chicken, shred the meat, and discard bones and skin; strain the broth and return it to the pot along with the shredded meat.
  3. Add the rice and simmer for 15–18 minutes until tender.
  4. Whisk the eggs with the lemon juice, then temper by whisking in a ladleful of the hot broth.
