Method

  1. Combine the flour, baking soda and salt in a bowl.
  2. Rub in the lard or butter until the mixture resembles coarse crumbs.
  3. Gradually add the warm water, mixing to form a smooth, firm dough.
  4. Knead for 5 minutes, then rest covered for 30 minutes.
  5. Divide into 4 pieces and roll each into a thin round about 3 mm thick.
  6. Cook each piadina on a hot dry griddle for 2-3 minutes per side until lightly browned with small blisters.
  7. Spread warm piadina with jam, fold in half, and serve immediately.
