Ingredients
- 800g (1 3/4 lb) goat meat, cut into pieces
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 thumb ginger, grated
- 1 scotch bonnet chilli, finely chopped
- 1 tsp ground crayfish or shrimp powder
- 1 tsp African pepper soup spice (or a mix of black pepper, calabash nutmeg and clove)
- 1.2L (5 cups) water
- Salt, to taste
- 2 spring onions, sliced, to finish
Method
- Place the goat meat in a large pot with the onion, garlic, ginger and half the chilli. Cover with water.
- Bring to a boil, skim any foam, then reduce to a simmer and cook for 45 minutes until the meat is tender.
- Stir in the crayfish powder, pepper soup spice and remaining chilli. Simmer for a further 10–15 minutes.
- Season with salt to taste, ladle into bowls, and top with sliced spring onion.
