Ingredients
- 400g (3 1/4 cups) plain flour
- 150ml (2/3 cup) coconut milk
- 60g (1/4 cup) sugar
- 7g (2 1/4 tsp) instant yeast
- 50g (3 1/2 tbsp) butter, softened
- 1 large egg
- 1/2 tsp salt
- 50g (1/2 cup) desiccated coconut
Method
- Warm the coconut milk to lukewarm and stir in the yeast and 1 tsp of the sugar. Leave for 10 minutes until foamy.
- In a large bowl, combine the flour, remaining sugar and salt. Make a well and add the egg, butter and yeast mixture.
- Mix and knead for 8–10 minutes until smooth and elastic. Cover and prove for 1 hour until doubled.
- Knock back the dough, divide into 8 rolls, and place on a lined tray. Sprinkle with desiccated coconut.
- Cover and prove for a further 20 minutes, then bake at 190°C (375°F) for 20–25 minutes until golden.
- Cool slightly on a wire rack and serve warm with strong black coffee.
