Ingredients
- Oxtail, cut into pieces — 1.2 kg (2.6 lb)
- Onion, chopped — 1
- Carrots, sliced — 2
- Celery stalks, chopped — 2
- Tomato paste — 2 tbsp

- Water — 1.9 L (64 fl oz)
- Bay leaf — 1

Method
- Heat the oil in a large pot and brown the oxtail pieces on all sides.
- Add the onion, carrot and celery, and cook for 5 minutes until softened.
- Stir in the tomato paste, then add the water and bay leaf.

- Skim any excess fat from the surface as needed.
