Ingredients
- Very fresh firm white fish fillet, cubed — 500 g (1 lb)
- Juice of 4 limes
- Coconut cream — 250 ml (1 cup)
- Small onion, finely diced — 1
- Tomato, diced — 1
- Cucumber, finely diced — 1
- Spring onion, sliced — 1
- Salt, — to taste
Method
- Place the cubed fish in a glass or ceramic bowl and cover with the lime juice.
- Refrigerate for 20-30 minutes, stirring once, until the fish turns opaque and firm.
- Drain off most of the lime juice, leaving a little for flavour.
- Fold in the coconut cream, onion, tomato, cucumber and spring onion.
- Season with salt to taste.
- Serve chilled immediately.
