Ingredients

  • Cucumbers, thinly sliced — 2

Method

  1. Combine the sliced cucumber with a pinch of salt in a bowl and let sit for 10 minutes, then drain any excess liquid.
  2. Combine the cold water, vinegar, soy sauce, sugar and garlic in a separate bowl, stirring until the sugar dissolves.
  3. Add the drained cucumber to the seasoned liquid.
  4. Sprinkle with sesame seeds and chilli flakes if using.
  5. Chill for at least 20 minutes before serving cold.
