Ingredients

  • Fresh okra, sliced — 300 g (10.5 oz)
  • Onion, chopped — 1
  • Tomatoes, chopped — 2
  • Garlic, minced — 1 clove
  • Chilli, chopped — 1
  • Oil — 2 tbsp
  • Bouillon cube — 1
  • Water — 960 ml (32 fl oz)
  • Salt — to taste

Method

  1. Heat the oil in a pot and sauté the onion and garlic until softened.
  2. Add the chopped tomatoes and cook for 5 minutes until broken down.
  3. Add the water and bouillon cube, then bring to a boil.
  4. Add the sliced okra and chilli, and simmer for 12–15 minutes until the okra is tender and the soup has a light, slightly silky texture.
  5. Season with salt and serve hot.

Introduction: A lighter, brothy okra soup seasoned simply with onion, tomato and chilli, distinct from the thicker sauce version served over tô.
